Gennaro, the owner and client of the cladding works for the restaurant, tells us about his vision at the inauguration of the restaurant on Calle Specchieri in San Marco: “few ingredients, treated as little as possible and perhaps left raw, many brought directly from Naples, the dough is light and has a much drier and more homogeneous electric cooking.
